Back a few decades ago the States had "anti-inter-racial-marriage" laws. How did they know who is what race?

Say my name is Sun but I look completely white, no Chinese at all, because my mom and grandmom were both white! Say back then when they had those anti-interracial-marriage laws, I would be classed as white because I look white, even though I have a Chinese last name?Back a few decades ago the States had "anti-inter-racial-marriage" laws. How did they know who is what race?Many people "passed" for white. The last name would give it away.
